Our tilting kettles make work more fun
Working in commercial kitchens is tough, with heavy lifting, hot tilting kettle and large volumes challenging every day. When we're out in the real world, it's not just service and maintenance. We pick up on problems, listen to ideas and study different ways of working to constantly find new and better solutions. Intelligent boiling & browning
The cooking function uses dual power stages and an accurate temperature measurement. This results in rapid heating and then a uniform temperature. If a product is added to the kettle, the control system reacts immediately and resets the temperature. The cooking process can also be timed. When the set time has elapsed, a hot holding programme takes over. At high temperatures it is also possible to roast directly in the tilting kettles. The boiling function of the Midi and Maxi versions also includes a brand new programme for fermenting doughs.
Core temperature control
It is the temperature of the food itself that determines the automation of cooking and cooling with core temperature control. Perfect for food that easily overcooks. A sensor that measures the temperature of the product controls the cooking or cooling process. Core temperature control is also a prerequisite for documentation and monitoring via Getinge Storköks HACCP control program, gs-doc™.
A unique new feature of the M5 Bas, Midi and Maxi version is the LED lighting in the lid that provides a perfect view through the inspection grid when the lid is on. This makes work much more efficient as there is no need to open the lid to check the cooking process and then restart the mixer after closing the lid.
All M5 generation kettles come with electronically controlled steering as standard. ART (Automatic ReTilt) automatically re-stocks the pot and allows easy filling in all types of pots with very high accuracy.
Precise water filling
The spout is mounted directly on the pot vessel, minimising the risk of contamination via surfaces not intended for food handling. Water filling is electronically controlled via a flow meter. The exact amount of water is indicated on the new graphic display. In addition, manual water filling can be initiated at any time via a special button located outside the display!
The stirrer has 6 preset programmes (from 5 to 155 rpm) covering everything from very gentle stirring to high-speed whisking. The stirrer is very powerful which means, for example, that you can make mashed potatoes from a full tilting kettle of boiled potatoes. The stainless steel stirring tool is volume-graded and is easily mounted in the pot. Both the stirring tool and the removable scrapers are easily washed in the dishwasher. A dedicated button for Hold-To-Run of the stirrer with the lid open has been introduced on the M5 to further facilitate work.
The cooling function uses ordinary cold water to cool down the steam jacket of the tilting kettles. Cooling is electronically controlled, which maximises water usage and saves a lot of water compared to traditional systems.
I W C - External cooling
Ice Water Chilling is perfect for a kitchen that delivers chilled food as the cooling is done directly in the kettle. This saves a lot of time and reduces the amount of heavy lifting for staff to a minimum during the cooking process. IWC is also excellent for cooking cold dishes as it ensures that the product does not reach temperatures that can cause the growth of microorganisms. IWC is a high performance system for chilling directly in the cooking pot via an external chiller. As food cooling is a process that is entirely dependent on the correct temperature and cooling rate, gs-doc™ is always included in the sale of cookware with IWC to facilitate quality assurance.
Programming & settings
The control electronics of the cooker are also equipped with a programming function where different programs can be stored in the memory. This both simplifies and increases the efficiency of cooking.
